Happy Saturday!

Today was a rest day in the Caroline Girvan – CGX – Max Program, so for me rest day often means Yoga and especially when it’s a week-end rest day (which means there’s time to do a longer session)

My go to yoga channel is Yoga With Adriene – today it was the Shakti Flow – challenging but just what I needed.

Remember 10 minutes a day makes a difference and the hardest part is deciding to get started.

The Just Right Quick & Easy Garlic Ginger Stir-Fry Sauce

Easy 20-Minute Chicken & Veggie Stir-Fry

(Inspired by trying to use up what I had in my fridge and a conversation with ChatGPT about what I could make for supper) Here’s what we came up with.

Busy weeknights call for quick, healthy meals that the whole family will love! This easy chicken and veggie stir-fry comes together in just 20 minutes, using simple ingredients you probably already have on hand. Plus, it’s a great way to use up cooked chicken and give your leftovers a fresh take that your family will love.

It’s packed with colorful vegetables, lean protein (I used leftover chicken), and a flavorful homemade sauce that tastes like something your favorite restaurant might make.

Veggies with Garlic Ginger Sauce

Ingredients:

For the Stir-Fry:

2 cups cooked chicken (shredded or cubed)

1 red bell pepper, sliced (yellow or orange work too)

1 cup cauliflower florets

1 large carrot, sliced

2 celery stalks, sliced

3 green onions, chopped

2 cups cooked rice (for serving)


For the Garlic Ginger Sauce:

¼ cup soy sauce (or tamari for gluten-free) — I used Braggs Liquid Aminos

1 tablespoon honey (or brown sugar)

1 tablespoon rice vinegar (or apple cider vinegar)

1 teaspoon sesame oil (optional but adds great flavor)

2 teaspoons cornstarch (for thickening)

½ cup water or chicken broth

1 teaspoon fresh grated ginger (or ½ teaspoon ground ginger)

2 cloves garlic, minced

½ teaspoon red pepper flakes (optional – Spicy is not my favorite so add at your own preference)




How to Make It:

1. Prep the veggies and start the stir fry. That way, they can cook while you prep the sauce.

2. Whisk together the sauce ingredients in a small bowl until smooth (Soy sauce, honey, rice vinegar, sesame oil, chicken broth and cornstarch)


3. Sauté garlic & ginger: Make room in the center of the pan and add a little oil (if needed). Add the garlic and ginger, stirring for about 30 seconds until fragrant.


4. Pour the sauce into the center and let it begin to simmer. Once it starts to thicken mix in with the veggies.

5. Add in chicken (or protein). Toss in the cooked chicken. Stir well, letting it cook for 2-3 minutes until the sauce thickens and coats everything.


6. Serve & enjoy: Sprinkle with green onions and serve over warm rice.



Time-Saving Tips for Busy Parents:

⏳ Use Pre-Cooked Chicken: Rotisserie chicken or leftover grilled chicken makes this even faster.
⏳ Chop Ahead: Pre-cut veggies the night before to save time.
⏳ Double the Sauce: Make extra sauce and store it in the fridge for an even quicker meal later in the week!

Recipe: Hot Fudge Pudding over Vanilla Ice Cream

Love a warm dessert on a cold day … or a warm dessert on a hot day?
Because this one is that good!

Hot Fudge Pudding is super easy to make.
Let it cook while you eat your meal and serve warm to hot over french vanilla ice cream (or your favourite flavour).

Pressure Cooker Stew

Ever have those days were you forget to take something out for supper?

Today’s last minute supper idea was pressure cooker stew made with frozen stew beef with cheese biscuits!

That’s right you make up a broth, add some garlic, onions and throw in the frozen stew meat. Then cook for 25 minutes and use a natural release.

Then you add the potatoes and carrots and cook for 4 minutes. Quick release

Add your cornstarch and water mixture and bring to a boil with the lid off. Follow up with the addition of the peas and carrots.

Voila! You have a tasty stew with the most tender stew beef😊

Favourite Yoga Videos

This fall I started taking a local Yoga class and loved it! One night a week to just relax and focus on some self care (okay maybe an hour and a half just for me;) And then the rest of the week happened. I enjoyed class but haven’t done enough yoga to build my own practice. So I started searching for free online videos (because who doesn’t like free:) Thanks to my sister in law’s suggestion I tried out Yoga with Adrienne.

She was offering a free 30 day Dedicate Yoga challenge. So I started 2019 off with a 30 day challenge that took me a month and a half to complete. I may have taken 30 days to complete the challenge but I did hit a 30 day stretch of daily Yoga – sometimes it was just 15 minutes of putting together my own yoga flow or a fabulous Wednesday of Yoga class.

I recently completed the 30 day challenge and discovered that Yoga with Adrienne has an entire You Tube Channel of videos:)

So if you are looking for a great place to start I highly recommend the 30 Day Dedicate Yoga challenge as a great place to start or you can always check out her awesome You Tube Channel – Yoga with Adrienne 🙂

Chicken Lettuce Wraps :)

Looking for something a little bit different? Since the start of the new year, we’ve been talking more about the food we eat as a family and just how many carbs we eat in a day. Just last week the new Canada food guide was released with healthy updates and suggestions.

So in a move to try out some different types of food, I’ve been looking for some new recipes. It turns out Facebook is quite helpful for sharing yummy new recipes and it wasn’t long ago that I came across Averie Cooks’ Copycat Recipe for P.F. Chang’s Chicken Lettuce Wraps.

Fast forward to a Sunday afternoon wonder about what to make for supper (or do you say dinner)? And I remembered the lettuce wrap recipe. So off I went to the local Co-oP grocery store to pick up what we needed. The recipe was easy to follow and it turned out quite good. Now I’m not sure how our version compares to the original restaurant version, but they were very tasty. Husband approved and almost daughter approved…. neither one really liked the water chestnuts and one wasn’t really in favour of wrapping her food in a leaf of lettuce. LOL.

My only change was to use 1 tsp of Asian Chili Garlic Sauce instead of 1tbsp – that was spicy enough for me 🙂 I also served this with Basmati rice because my daughter likes the option and it helped turn down the heat a bit for me:) (yes I’m not a fan of spicy food).

The end of an era…

It’s with a heavy heart that I say good-bye to Color By Amber. We found out on Friday (November 2, 2018) that Color By Amber is closing its doors. From the moment I joined the CBA adventure in July of 2014, it’s been an amazing journey. I’m grateful to have been surrounded by amazing customers and supportive friends. I have very much appreciated your encouragement through out my CBA adventure. Thank-you!

I’m thankful for all of the truly talented, creative and genuine people that I’ve met from across North America. I’m grateful for the opportunity to have traveled to places I’d never dreamed of going with the most amazing people. I’m thankful to started the adventure with great friends and ended the journey with many friendships that will last a lifetime. I’ve been fortunate to learn from talented entrepreneurs and share in a journey that was about so much more than jewelry. I’ve learned from an amazing home office team including a CEO and founder that we can all make a difference in the choices that we make. Every product has a story shaped by people who create it. And that’s what drew me to Color By Amber, I loved that I was able to meet the artisans and see first hand how the product was made and the impact that it had on people’s lives. The Bio teacher in me loved that CBA and 3Form are committed to sustainable environmental practices. Because as our founder explained, you can’t wait for the government or other agencies to tell you the planet we live on is a priority. You have to lead by example.
What an amazing 4 years filled with the most wonderful memories. I feel like this isn’t the end but rather the close of one chapter and the start of new story.
